Healthy Vegetable Salads that Prevent Stress and Anxiety

Eating the right kind of meals help boost your immune system because you are eating what is good for you. Vegetables are rich in vitamin B complex, which also include folic acid that increases serotonin levels. Serotonin is a natural mood relaxant that is being produced by the brain. Certain foods have a good effect on neurotransmitters or brain chemicals that will make you feel more relaxed.Here are some salads that you can make at home that are gluten-free and healthy.

Gluten-free Potato Salad

A simple vegetable salad that you can make is a potato salad. Use about three pounds of potatoes and a pound of bacon that is gluten-free. Add a pound of green beans and a quarter cup of parsley and half a cup of sliced onions. Use some vinegar, gluten-free mustard, gluten-free chicken broth and half a cup of light olive oil. Peel and boil the potatoes, at the same time fry the bacon until it becomes crisp and cook the green beans and steam it until tender. Place the potatoes, green beans and onions on a bowl. In a separate bowl mix the olive oil, broth, vinegar, mustard, salt and pepper. Pour it as a dressing and top it with crushed bacon bits and toss the salad.

No Gluten Spinach Salad

You can start eating more spinach which is very good in fighting stress. Mix some olive oil in a bowl with vinegar, salt and pepper. Toss it in with a bowl full of spinach while mixing some eggplants that was charred using a hot grill or pan. Include some chopped red, yellow or green peppers which are rich in vitamin C. You can use some cheese on top or sprinkle some nuts. The salad has a lot of vitamin C that will give you some boost against stress and anxiety. Vitamin C helps the body to cope with certain infections and boost the immune system. At the same time eating more vegetables also help in digestion because of lots of dietary fiber that could lower your cholesterol.

Gluten-less Greek salad

This salad can be served as a side dish with your favorite fish or seafood dish. It is perfect with a grilled salmon or your favorite seafood. You would need to have some a head of lettuce and three big ripe tomatoes. One bell pepper sliced into thin rings, medium sized cucumber and a red onion thinly sliced. To make it an authentic Greek salad score some pepperoncini pickled peppers and a jar of Greek olives. You also need eight ounces of Feta cheese and some parsley. Make a Mediterranean salad dressing that is gluten-free by combining four tablespoons of lemon juice, salt, two garlic cloves, three fourths cup of light olive oil and spearmint or lemongrass tea and some a tablespoon of honey. Open the teabags to a mixture of garlic, salt, lemon juice and honey and slowly drizzle in the olive oil while mixing. Continue whisking the mixture until it thickens.

These are just few of the many healthy vegetable salads that you can prepare at home. Remember that eating more of raw foods such as those uncooked leafy vegetables in salad recipes will help you obtain more enzymes. These enzymes play an important role in reducing the damaging effects of free radicals which often occurs as a result of anxiety, depression and unhealthy diet. If your daily diet includes more of plant-based foods chances are you will live longer as you become stronger against any forms of stress. As you are already aware of, stress can often prelude the existence of several serious diseases. So, the more you eat vegetables, the more you increase your capacity to become more productive because you will not be easily shaken by the debilitating effects of stress.
