Gluten Free Scones: Cheese Bacon & Mushroom

As it starts to get colder, scones make a great morning or afternoon snack. If you or someone in your family has a gluten intolerance then this is a recipe that I made for our daughter that was a big hit.

Cooking Time: 40 minutes

  • 2 Cups of Gluten Free ‘Self Raising’ Flour
  • 2 Tbsp of Butter
  • A Pinch of Salt
  • Herbs to Taste
  • 4 Slices of Short Cut Bacon (Diced)
  • 3/4 Cup of Grated Cheese
  • 1/2 Cup of Finely Chopped Mushrooms

-  Preheat oven 200 degrees Celsius.

-  Sift flour and salt into a large mixing bowl.

-  Use fingers to rub butter into flour and salt.

-  Add diced bacon, cheese, mushrooms and your favourite herbs to taste.

-  Slowly add milk, stirring with a blunt knife until mixture forms a dough.

-  Turn out dough onto floured surface and knead lightly.

Ensure you do not to over work the dough

-  Flatten dough into 2cm thick, cut into circles with a glass or scone cutter.

-  Place scones touching on a lined baking tray.

-  Bake for 20-25 minutes or when scones become golden.

Mushrooms, bacon and cheese can be substituted for any finely chopped vegetable for example:

  • Zucchini
  • Capsicum
  • Onion

If you are looking for a nice and easy gluten free snack, I recommend giving this one a try – I’m sure you and your family will love them!
