Gluten Free Banana & Sultana Muffins

Muffins are always a favourite for morning or afternoon tea and is perfect with a nice cup of tea. We recently made this recipe in our house and it was a big hit. Make sure you check out the additional hints down the bottom and I hope you and your family love it as much as we did.

Cooking Time: 45 minutes


  • 3-4 Ripened Bananas
  • 2 Tbs of Butter (or Margarine)
  • 1 Egg Beaten
  • 2 Cups of Gluten Free ‘Self Raising’ Flour
  • 2 Tbs of Milk
  • 1/2 Cup of Honey
  • 3/4 Cup of Sultanas


-  Preheat oven 180 degrees Celsius.

-  Mash bananas into a large mixing bowl.

-  Beat eggs and bananas with electric mixer.

-  Add all other ingredients.

- Stir with wooden spoon to combine.

- Spoon into greased muffin tin.

- Bake for 25-30 minutes, until risen and golden.


Sultanas can be substituted for other fruits, such as:

  • Blueberries
  • Raspberries
  • Blackberries
Or if you are craving some more sugar (on top of the honey) then you could also use choc chips instead of sultanas.

These gluten free muffins make a tasty little afternoon snack, and if you get your timing right then they will still be warm when your kids come home from school ready for something to eat!

To change this recipe up, it also bakes nicely into a loaf cake.

NOTE: I sprinkled oats on the top of each muffin before baking for added texture. Also, I kept tasting the mixture for sweetness and added honey until I was happy.
